Sauvignon blanc

Trapi Sauvignon blanc Hand Made, is produced with the best selection of grapes from one of the southest most vineyards in Chile, in the Chilean Patagonia. Our vineyard is situated in La Union, latitude 40° 17’, one of the coldest viticulture places in Chile where the cold climate is result of the south extreme latitude and not for the ocean influence.

The cold climate and the good isolation give particularly aromatic grapes with a rich natural acidity. Soils are deep with 25% of slope, good drainage and significant clay content with multicolor volcanic stones which allow good volume and mineral mouth feel.

WINEMAKING
  • Harvested by hand by friends and neighbors of the vineyard
  • Hand sorting of clusters and berries
  • Gently pressed with full cluster in pneumatic press
  • Decanting and natural clarification of the juice with manual selection of the fine golden lees
  • 80-90 of the mixture ferments in stainless steel and a small part in neutral French barrels
  • 3-5 months of aging on lees, without batonnage, to maintain its freshness unaltered
  • No malolactic fermentation

TASTING NOTES

This Sauvignon blanc is an intense, chiselled, lightly wooded Sauvignon Blanc with salty, white pepper top notes and a kelp and elderflower palate. The flavors are long and the finish has slight herbal and again floral touches. It is a Sauvignon blanc from Patagonia with an electric character.

PAIRING

Sole ceviche, oysters black edge and sea urchins in green sauce.

Chardonnay

Variety: [100% chardonnay] / Material: [Mendoza massal selection and 76 clone].

This Chardonnay Hand Made was produced with grapes from our best selection of Chardonnay from one of the southest most vineyards in Chile in the Chilean Patagonia. Our vineyard is situated in La Union, latitude 40° 17’, one of the coldest viticulture places in Chile where the cold climate is result of the south extreme latitude and not for the ocean influence.

TASTING NOTES

Golden yellow in the glass. The nose offers a layer of fennel, green apple and a subtle cedar aromas. Skinny with good vibrant acidity and voluminous flow. It is both, tense and delicate. There is precision, symmetry and some austerity. A rewarding wine.

Garlic prawn skewers, river trout with butter sauce, gruyère oyster gratin and gnocchi with noisette sauce and black truffle.

Pinot noir

Variety: [100% Pinot noir] / Material: [Clone 777 and massal selection].

This Pinot noir is produced with selected grapes from our vineyard, one of the southernmost in Chile. Located in the city of La Unión, latitude 40° 17′, one of the coldest wine-producing areas in the country, where the cold climate is the result of the extreme south latitude, without marine influence. The cold continental climate and good insolation in the area allow the production of very aromatic and particularly fresh grapes.

The soils are deep with a 25% slope, excellent drainage and a high clay content with multicolored volcanic stones that allow excellent volume and minerality to be obtained in the wine. These conditions allow this variety to develop a unique profile, marked by rich maturity and attractive elegance.

  • Extraction of color and aromas with gentle daily punch down, during the first days of fermentation

TASTING NOTES

Our Pinot noir is deep and intense, full of raspberries, cherries, wild strawberries and fresh mushrooms. It has an elegant profile and bright fruit. It is complex and aromatic, floral, with hints of orange peel and well-integrated spices, on a medium-bodied palate and round tannins. The finish is marked by a fresh and luminous acidity that allows a long and delicate finish.

This wine captures the freshness and tension of the cold climate of the extreme south, of Chilean Patagonia.

PAIRING

Tuna tartare, cream of roasted pumpkins, grilled octopus, risotto with mushrooms and black truffles, boeuf bourguignon, roast lamb and soft cheeses.
