This sparkling wine is produced with the earliest harvest and from our freshest blocks in our vineyard, one of the southernmost in Chile.

Located in the city of La Unión, latitude 40° 17′, one of the coldest wine-producing areas in the country, where the cold climate is the result of the extreme south latitude, without marine influence. The cold continental climate and good insolation in the area allow the production of very aromatic and particularly fresh grapes.

The soils are deep with a 25% slope, excellent drainage and a high clay content with multicolored volcanic stones that allow excellent volume and minerality to be obtained in the wine.

WINEMAKING
  • Blanc de noirs sparkling wine using the traditional method
  • Soft pressed, with full bunch, in a pneumatic press
  • Fermentation of the base wine with wild native yeast, in neutral French barrels, where it is aged for 1 year
  • Second fermentation in the bottle, with 3 years of aging on its fine lees
  • No filtration to bottling

TASTING NOTES

Delicate Brut Nature of beautiful natural complexity, where the unique elegance of the cold climate of Patagonia.

It is refreshing, tense, with a vibrant palate, notes of lemon zest, toast, wild strawberries and a remarkable acidity that ends in an impressive length on the palate.

Multiple chains of small bubbles rise slowly from different points in the glass, swirling to the surface where they form a fine and persistent foam.

Oysters black edge and caviar, lobster and king crab.
